The story goes that in 1964, Teressa Bellissimo, the owner of the Anchor Bar in Buffalo, New York, was trying to find a way to use up some leftover chicken wings. She decided to deep-fry them and toss them in a hot sauce that she had made. The wings were a hit with her son and his friends, and they quickly became a popular item on the Anchor Bar menu.

The Anchor Bar claims to be the originator of Buffalo chicken wings, but there is some debate about this. Another Buffalo restaurant, Wings and Things, also claims to have invented the dish in the early 1960s. It is possible that both restaurants independently came up with the idea of deep-frying and saucing chicken wings.

Whatever the case may be, Buffalo chicken wings quickly spread from Buffalo to the rest of the United States. They became a popular sports game-day food, and they were also featured in many restaurants and bars. In 1977, the city of Buffalo declared July 29th to be Chicken Wing Day in honor of the dish’s invention.

The Wing Society Recipe for Buffalo Wings

Here is our recipe for tasty Buffalo Chicken Wings that can be made at home. We choose to bake our wings, and while Fried wings are tastier, these are almost just as good, without the need for deep-fat frying at home.

Oven-Baked Buffalo Chicken Wings

A simple but tasty recipe for Bufflo Wings, baked in the oven.

Equipment

  • 1 oven
  • 1 large bowl
  • 1 saucepan
  • 1 serving dish

Ingredients
  

  • 1 kg chicken wings seperate into drumettes and flats
  • 1 tbsp baking powder
  • 1 tsp fine salt we prefer sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp ground white pepper ground black pepper is also fine if you don't have white pepper
  • 4 tbsp oil olive oil, rapeseed or vegetable oil
  • 120 ml hot sauce Frank's red hot sauce is the most common however choose your favorite hot sauce
  • 115 g butter
  • 1 tbsp brown sugar (optional)

Instructions
 

  • Preheat the oven to 200°C (400°F)
  • In a large bowl, combine chicken wings, baking powder, salt, garlic powder, and pepper. Toss to coat.
    1 kg chicken wings, 1 tbsp baking powder, 1 tsp fine salt, 1/2 tsp garlic powder, 1/4 tsp ground white pepper
  • Drizzle with the oil. Toss to coat again.
    4 tbsp oil
  • Spread chicken wings in a single layer on a baking sheet.
  • Bake in the preheated oven for 20 minutes, or until cooked through and golden brown.
  • Meanwhile, in a small saucepan, combine butter, hot sauce, and brown sugar (optional). Heat over medium heat until butter is melted and sauce is smooth.
    120 ml hot sauce, 115 g butter, 1 tbsp brown sugar
  • Remove chicken wings from oven and toss with hot sauce mixture.
  • Serve immediately with your favorite dipping sauce.

Notes

  • Use fresh chicken wings. Frozen chicken wings will not be as crispy.
  • Don’t overcrowd the baking sheet. If you pack the chicken wings too tightly, they will not cook evenly.
  • Baste the chicken wings with the hot sauce mixture halfway through cooking. This will help them get extra crispy.
  • Serve with your favorite dipping sauce. Ranch dressing, blue cheese dressing, and celery sticks are all classic choices.
